I’m a major avocado lover and am constantly on the lookout for new ways to enjoy it. This month’s issue of Glamour magazine and All Recipes both have really good ways to eat this combo 🙂
The recipe from Glamour is so quick and easy and makes multiple servings.
Yum right?! It tastes just as good as it looks.
All you need to do is cut the sweet potato into 1/4 in slices and toast them. Yeah I know, but the recipe says you can and it does work! You can also pop it in the microwave to soften it up as well as brown it. Then slice the avocado on top and sprinkle with salt and lemon pepper.

The All Recipes version is a little fancier, but still quick and still delicious!
This calls for steaming the sweet potato, either in the microwave or on the stove, chopping it and the avocado, cover with parmesan, black pepper, and salt. Easy enough for ya??
